SENSORY ARTWORKS

When our patissier designs something new, he starts with pen and paper. It's only this way that he can plan every small detail that will go into constructing a perfect dish. With the first stroke of the whisk, every move is clocked.

 

Every layer, couverture and decorative element is produced individually. For the moment the soloists turn into an orchestra, every component has to be in the perfect physical state. The patisserie doesn't only design the last course of the meal. It designs a moment in which cold meets hot, foamy meets firm and fruity meets bitter. It is architecture for the plate, which exists only for the moment of pleasure.
